- 2 pounds fresh spinach (or frozen, thawed and drained)
- 2 cloves garlic, minced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- If using fresh spinach, wash and wilt it in a large pan. If using frozen, thaw and squeeze out excess moisture.
- Combine spinach with garlic, feta cheese, and seasonings.
- Allow filling to cool completely.
- Roll out puff pastry sheets and spread the filling.
- Roll up tightly and seal edges with egg wash.
- Cut into individual portions.
- Brush with egg wash and bake until golden brown.
Notes
- Can use frozen spinach instead of fresh – just thoroughly drain.
- Remove excess moisture from spinach to prevent soggy rolls.
- Can be prepared in advance and frozen.
