- 1 1/2 cups (355 ml) orzo (small rice-shaped pasta)
- 1 small bunch fresh spinach or 200g (7 oz) prewashed spinach
- 1/2 purple onion, finely chopped
- 1/2 – 1 cup (240 ml) crumbled cheese
- grated zest and juice of a lemon (about 3 Tbsp. or 45 ml)
- 2 Tbsp. (30 ml) rice vinegar
- 2 Tbsp. (30 ml) vegetable oil
- Salt and pepper to taste
Instructions
- Prepare the orzo as per the instructions on the package; drain it thoroughly, and rinse with cold water to cool it, then place it in a mixing bowl.
- Cut the spinach into thin strips by stacking the leaves, rolling them tightly, and slicing through, or simply tear them with your hands, depending on your preference. Combine this with the chopped onion, crumbled cheese, and grated lemon zest.
- Pour the lemon juice over the mixture, and add the rice vinegar, vegetable oil, salt, and pepper. Mix everything together until well-coated. Taste and adjust the seasoning as needed. You can serve it immediately or chill it in the fridge until you’re ready to enjoy it.
