Ingredients

  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 4 large tortillas
  • 1/2 cup mozzarella cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash and chop spinach
  2. Sauté garlic in olive oil
  3. Add spinach and cook until wilted
  4. Place tortilla in pan, add cheeses and spinach mixture
  5. Fold and cook until crispy and cheese melts

Notes

  • You can substitute other cheeses for mozzarella if desired
  • Store leftover filling in an airtight container for up to 2 days
  • Make sure to cook the spinach until all excess moisture is gone to prevent soggy quesadillas
