- 2 cups grated fresh squash
- 1/2 cup breadcrumbs, plus more if needed
- 2 eggs, beaten
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh herbs (parsley, chives, or dill)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- Squeeze excess moisture from the grated squash using a clean kitchen towel.
- In a large bowl, combine the dried squash, breadcrumbs, eggs, Parmesan cheese, herbs, onion, garlic, salt, and pepper.
- Mix well until all ingredients are fully incorporated. If the mixture seems too wet, add more breadcrumbs one tablespoon at a time.
- Form the mixture into small patties about 2-3 inches in diameter.
- Heat vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
- Carefully place the croquettes in the hot oil, being careful not to overcrowd the pan.
- Fry for 2-3 minutes on each side until golden brown and crispy.
- Remove with a slotted spoon and place on paper towels to drain excess oil.
- Serve hot with your favorite dipping sauce.
Notes
- For extra flavor, try adding different herbs or spices to the mixture.
- You can use any type of squash – yellow summer squash, zucchini, or butternut squash work well.
- Make sure to thoroughly squeeze out excess moisture from the squash to ensure crispy croquettes.
- These can be baked instead of fried for a healthier option.
