  • 2 eggs, beaten

  • 2 tablespoons chopped fresh herbs (parsley, chives, or dill)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Squeeze excess moisture from the grated squash using a clean kitchen towel.
  2. In a large bowl, combine the dried squash, breadcrumbs, eggs, Parmesan cheese, herbs, onion, garlic, salt, and pepper.
  3. Mix well until all ingredients are fully incorporated. If the mixture seems too wet, add more breadcrumbs one tablespoon at a time.
  4. Form the mixture into small patties about 2-3 inches in diameter.
  5. Heat vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
  6. Carefully place the croquettes in the hot oil, being careful not to overcrowd the pan.
  7. Fry for 2-3 minutes on each side until golden brown and crispy.
  8. Remove with a slotted spoon and place on paper towels to drain excess oil.
  9. Serve hot with your favorite dipping sauce.

  • For extra flavor, try adding different herbs or spices to the mixture.
  • You can use any type of squash – yellow summer squash, zucchini, or butternut squash work well.
