Description

A warm and hearty steak and potato soup that brings comfort and joy, perfect for family gatherings and cold weather.


Ingredients

  • 1.5 pounds beef stew meat
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced or pressed
  • 2 pounds russet potatoes, peeled and diced
  • 1 tablespoon all-purpose flour
  • 3 cups chicken stock
  • 1 cup freshly grated or shredded cheddar cheese
  • 3/4 cup heavy cream

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat and add a drizzle of oil.
  2. Sear the beef stew meat until golden-brown and then remove from the pot.
  3. Add diced onion to the pot and sauté until softened and slightly caramelized.
  4. Add minced garlic and cook until fragrant.
  5. Sprinkle flour over the mixture and cook for about a minute.
  6. Pour in chicken stock, scraping any bits off the bottom.
  7. Add diced potatoes and return the seared beef to the pot.
  8. Bring to a gentle simmer, cover, and cook on low heat for about an hour.
  9. Stir in heavy cream and cheddar cheese until melted and blended.
  10. Season with salt and pepper to taste, then serve warm.

Notes

Serve with a sprinkle of freshly grated cheese and consider pairing with crusty bread or a side salad.
