- 1.5 pounds beef stew meat
- 1 medium yellow onion, diced
- 3 cloves garlic, minced or pressed
- 2 pounds russet potatoes, peeled and diced
- 1 tablespoon all-purpose flour
- 3 cups chicken stock
- 1 cup freshly grated or shredded cheddar cheese
- 3/4 cup heavy cream
Instructions
- Heat a large pot or Dutch oven over medium-high heat and add a drizzle of oil.
- Sear the beef stew meat until golden-brown and then remove from the pot.
- Add diced onion to the pot and sauté until softened and slightly caramelized.
- Add minced garlic and cook until fragrant.
- Sprinkle flour over the mixture and cook for about a minute.
- Pour in chicken stock, scraping any bits off the bottom.
- Add diced potatoes and return the seared beef to the pot.
- Bring to a gentle simmer, cover, and cook on low heat for about an hour.
- Stir in heavy cream and cheddar cheese until melted and blended.
- Season with salt and pepper to taste, then serve warm.

Serve with a sprinkle of freshly grated cheese and consider pairing with crusty bread or a side salad.
