- 1 lb lean steak (flank or sirloin)
- 1–2 tbsp avocado oil
- 2 tsp chili powder
- 1 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- Salt and pepper (to taste)
- 1 cup jasmine rice or quinoa (cooked)
- 2 cups shredded lettuce
- 1 can black beans (15 oz, drained and rinsed)
- 1/3 cup shredded cheese (reduced-fat or dairy-free)
- 1 red onion (diced)
- 1 cup corn kernels (fresh, canned, or frozen)
- 1/4 cup guacamole
- 1/2 cup pico de gallo
- 1/4 cup fresh cilantro (chopped)
- Lime wedges
- 1 cup light sour cream or Greek yogurt
- 1–2 whole limes (juice and zest)
- Salt (to taste)
Instructions
- Preheat the grill or stovetop pan to medium-high heat. Combine the spices and season both sides of the steak.
- Add avocado oil to the hot pan, place the steak, and cook for a few minutes on each side until desired doneness. Let rest before slicing.
- Warm the black beans and corn in separate pans over medium heat with a pinch of salt.
- Mix sour cream or Greek yogurt with lime juice, zest, and salt to make lime crema.
- Assemble the bowls starting with shredded lettuce, then layering rice or quinoa, warmed corn, black beans, diced onion, and shredded cheese. Top with guacamole, lime crema, and cilantro. Serve with lime wedges.
