A delightful dish that transforms ordinary tofu into a culinary star with a sweet and savory glaze of miso, maple syrup, soy sauce, and rice vinegar.

- 14 ounces extra firm tofu
- 1 tablespoon neutral oil (vegetable or avocado)
- 1 teaspoon nutritional yeast (optional)
- 1 tablespoon corn starch
- 1 teaspoon garlic powder
- 1 tablespoon miso paste (any color)
- 2 tablespoons water
- ¼ cup low sodium soy sauce
- 2 tablespoons maple syrup
- 1 teaspoon toasted sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon minced ginger
- 1 tablespoon minced garlic
- 1 teaspoon sriracha (optional)
- 1 teaspoon corn starch
Instructions
- Press the tofu for at least 30 minutes to remove excess moisture.
- Preheat the oven to 400°F (200°C) and cut the pressed tofu into cubes or slices.
- In a mixing bowl, combine 1 tablespoon corn starch, 1 teaspoon garlic powder, and a drizzle of neutral oil, then toss the tofu in this mixture.
- Arrange the coated tofu on a baking tray lined with parchment paper and bake for about 25-30 minutes, flipping halfway through.
- In another bowl, prepare the marinade by mixing miso paste, water, soy sauce, maple syrup, sesame oil, rice vinegar, ginger, garlic, and sriracha.
- After baking, add the tofu to the marinade and let soak for at least 10 minutes.
- Return the marinated tofu to the baking tray and bake for an additional 10 minutes.
- Sprinkle with nutritional yeast before serving.
Notes
Experiment with the sriracha amount based on your spice preference. Marinating tofu longer enhances flavor absorption.
