Delicious sticky tofu bowls featuring crispy tofu coated with a savory-sweet sauce, served over rice and topped with fresh ingredients.


Ingredients

  • 1 14-oz package extra firm tofu
  • 2 tbsp cornstarch
  • ½ cup soy sauce (or coconut aminos)
  • 3 tbsp maple syrup
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 cloves minced garlic
  • 1 tbsp grated ginger
  • 3 cups cooked rice
  • 2 cups steamed edamame
  • 1 avocado
  • Optional: sesame seeds and spring onions to garnish

Instructions

  1. Press the tofu between paper towels to remove excess moisture, then cut into small to medium cubes.
  2. Coat the tofu with cornstarch in a sealed container and shake gently.
  3. Preheat a frying pan over medium heat with olive oil.
  4. Add the tofu cubes to the pan and stir constantly to prevent sticking.
  5. Cook until the tofu is golden brown and crispy, about 10 minutes, flipping occasionally.
  6. In a bowl, whisk together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger.
  7. Once the tofu is crispy, pour the sauce over it and let it thicken for a few minutes.
  8. Assemble the bowls with a base of cooked rice, top with crispy tofu, steamed edamame, and sliced avocado.
  9. Garnish with sesame seeds and chopped spring onions if desired.

Notes

For a lighter option, consider baking the tofu instead of frying. Store components separately to maintain texture when reheating.
