- 1 pound lean ground beef
- 8 ounces penne or fusilli pasta
- 1 cup heavy cream (or half-and-half)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large skillet over medium heat, pour in the olive oil.
- Sauté the diced onion until it becomes translucent, about 5 minutes.
- Add the minced garlic and continue to cook for an additional minute.
- Introduce the ground beef to the skillet. Brown it for 6-8 minutes, seasoning with salt and pepper.
- While the beef cooks, boil salted water in another pot. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside.
- Pour the vegetable broth into the skillet with the cooked beef, then stir in the heavy cream. Simmer for approximately 3 minutes.
- Add the grated Parmesan cheese to the skillet, stirring until it melts into the sauce.
- Combine the cooked pasta with the creamy sauce in the skillet, gently stirring to coat each piece evenly.
- Adjust the seasoning if needed, and serve immediately with extra Parmesan sprinkled on top.
Notes
For added texture, try tossing in some spinach or kale at the end when combining the pasta with the sauce.
