  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • 1 package cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually blend the dry ingredients into the butter mixture.
  5. Gently fold in the chopped strawberries.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until lightly golden.
  8. While the cookies cool, beat the softened cream cheese and powdered sugar until smooth.
  9. Once the cookies have cooled, spread a layer of the cream cheese filling between two cookies to make a sandwich.
