Ingredients
1/2 watermelon, cubed
6–8 strawberries
3–4 mint leaves
Pinch of salt
Honey Lime Vinaigrette:
1/3 cup (80 ml) honey
1/2 teaspoon (3 ml) lime peel
1/4 cup (60 ml) fresh squeezed lime juice
1/8 teaspoon (1 ml) ground nutmeg or cinnamon
3/4 cup (180 ml) salad oil
Instructions
1. Slice the watermelon into small squares and transfer them to a big bowl.
2. Remove the stems from the strawberries, slice them, and mix them with the watermelon.
3. Thinly cut the mint leaves and scatter them over the top.
4. Sprinkle with a touch of salt.
5. Honey Lime Vinaigrette:
6. In a small bowl, combine the honey, lime zest, lime juice, and either ground nutmeg or cinnamon.
7. Stir the ingredients together, slowly adding half of the salad oil while maintaining a constant thin stream.
8. Continue stirring until the mixture becomes thick, then add more oil to achieve your preferred taste.
9. Pour the dressing over the watermelon mixture and enjoy.
Notes
1. For a more intense mint flavor, gently bruise the mint leaves before thinly slicing to release their essential oils.
2. To ensure even coating, gradually add the vinaigrette while gently tossing the watermelon and strawberries.
3. Zesting the lime directly over the vinaigrette bowl will capture more of the aromatic oils for a fresher taste.
4. Allow the salad to sit for a few minutes after dressing to let the flavors meld, enhancing the overall taste.
