- 4 large baking potatoes
- 1 pound shrimp, peeled and deveined
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the baking potatoes and poke holes in them with a fork.
- Bake the potatoes directly on the oven rack for about 45-60 minutes or until tender.
- In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
- Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
- Stir in heavy cream and bring to a simmer, then add shredded cheese until melted and combined.
- Once the potatoes are cooked, slice them open and fluff the insides with a fork.
- Spoon the shrimp and creamy garlic sauce mixture on top of the fluffed potato and garnish with chives or parsley.
- Serve immediately and enjoy!
Notes
For a faster option, you can microwave the potatoes. Wrap them in a damp paper towel and heat until tender.
