A comforting stuffed baked potato topped with succulent shrimp and a creamy garlic sauce.


Ingredients

  • 4 large baking potatoes
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the baking potatoes and poke holes in them with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-60 minutes or until tender.
  4. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  5. Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
  6. Stir in heavy cream and bring to a simmer, then add shredded cheese until melted and combined.
  7. Once the potatoes are cooked, slice them open and fluff the insides with a fork.
  8. Spoon the shrimp and creamy garlic sauce mixture on top of the fluffed potato and garnish with chives or parsley.
  9. Serve immediately and enjoy!

Notes

For a faster option, you can microwave the potatoes. Wrap them in a damp paper towel and heat until tender.
