- 1 flank steak
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted.
- In a bowl, combine cooked spinach, ricotta, mozzarella, and sun-dried tomatoes. Season with salt and pepper.
- Lay the flank steak flat and season with salt and pepper. Spread the spinach mixture evenly over the steak.
- Roll the flank steak tightly and secure with kitchen twine or toothpicks.
- In the same skillet, sear the steak on all sides until browned.
- Transfer the steak to the oven and bake for 25–30 minutes, or until cooked to your desired doneness.
- Let rest for 10 minutes before slicing and serving.
Notes
Letting the stuffed flank steak rest after cooking enhances its juiciness. Experiment with different herbs for personal preference.
