Description

Ingredients

  • 4 large Russet potatoes
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped
  • Cooking spray for muffin tin

Instructions

  1. Peel and cut potatoes into chunks. Boil until fork tender, about 15 minutes.
  2. Drain potatoes thoroughly and mash until smooth.
  3. Allow mashed potatoes to cool slightly, then mix in eggs, Parmesan cheese, melted butter, salt, garlic powder, and black pepper.
  4. Preheat oven to 400°F (200°C) and spray a muffin tin with cooking spray.
  5. Spoon potato mixture into each muffin cup, creating a well in the center by pressing mixture up the sides.
  6. Bake for 20-25 minutes until edges are golden brown and crispy.
  7. Allow to cool for 5 minutes before removing from muffin tin.
  8. Sprinkle with fresh chives and fill with desired toppings before serving.

Notes

  • These can be made ahead and reheated in a 350°F oven for 10 minutes.
  • Try filling with sour cream, bacon bits, cheese, or even eggs for a complete appetizer.
  • For extra crispy nests, brush with a little olive oil before baking.
