- 4 large Russet potatoes
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons fresh chives, chopped
- Cooking spray for muffin tin
Instructions
- Peel and cut potatoes into chunks. Boil until fork tender, about 15 minutes.
- Drain potatoes thoroughly and mash until smooth.
- Allow mashed potatoes to cool slightly, then mix in eggs, Parmesan cheese, melted butter, salt, garlic powder, and black pepper.
- Preheat oven to 400°F (200°C) and spray a muffin tin with cooking spray.
- Spoon potato mixture into each muffin cup, creating a well in the center by pressing mixture up the sides.
- Bake for 20-25 minutes until edges are golden brown and crispy.
- Allow to cool for 5 minutes before removing from muffin tin.
- Sprinkle with fresh chives and fill with desired toppings before serving.
Notes
- These can be made ahead and reheated in a 350°F oven for 10 minutes.
- Try filling with sour cream, bacon bits, cheese, or even eggs for a complete appetizer.
- For extra crispy nests, brush with a little olive oil before baking.
- Store leftovers in an airtight container for up to three days.
