  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 large tomato, diced
  • 1 pound ground beef (85/15 recommended)
  • 3 cups beef stock
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons garlic powder
  • 1/4 to 1/2 teaspoon black pepper (to taste)
  • Salt (to taste)
  • 3/4 cup Jasmine rice

Instructions

  1. Dice the vegetables: Finely dice the onion, bell peppers, and tomato. Set aside.
  2. Heat the olive oil: Preheat a Dutch oven over medium heat and add olive oil.
  3. Sauté the veggies: Add the diced onions and bell peppers, stirring until softened, then add the diced tomato and cook for a few more minutes.
  4. Cook the ground beef: Move the vegetables to the sides of the pot, add the ground beef in the center, breaking it apart as it cooks. Cover the pot for a few minutes.
  5. Combine and cook: Break up the beef further, combine with vegetables, cover, and cook until the beef is mostly done.
  6. Mix in tomato paste: Stir in the tomato paste, then pour in beef stock and stir to combine.
  7. Season the soup: Add oregano, basil, garlic powder, salt, and pepper. Stir well, lower heat, and cover with a slight crack for steam to escape. Simmer for about 20 minutes.
  8. Add rice: Mix in Jasmine rice, close the lid tightly, and cook until the rice is tender.
  9. Serve: Ladle the soup into bowls and enjoy the comforting warmth.
