Description

A comforting and hearty soup combining the flavors of stuffed peppers with ground meat, tomatoes, and broth.


Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup green bell peppers, diced
  • 1 cup red bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup rice (uncooked)
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey until cooked through.
  2. Add the diced onion and minced garlic to the pot.
  3. Sauté until the onion softens and becomes translucent.
  4. Stir in the diced green and red bell peppers, cooking for a few more minutes.
  5. Pour in the diced tomatoes, beef or vegetable broth, and uncooked rice.
  6. Add the Italian seasoning, salt, and pepper to taste.
  7. Bring the mixture to a boil.
  8. Reduce heat and simmer for about 20-25 minutes, or until the rice is cooked and the soup is heated through.
  9. Serve hot, and enjoy the comforting flavors!
