Ingredients

- 1 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup green bell peppers, diced
- 1 cup red bell peppers, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 1 cup rice (uncooked)
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, brown the ground beef or turkey until cooked through.
- Add the diced onion and minced garlic to the pot.
- Sauté until the onion softens and becomes translucent.
- Stir in the diced green and red bell peppers, cooking for a few more minutes.
- Pour in the diced tomatoes, beef or vegetable broth, and uncooked rice.
- Add the Italian seasoning, salt, and pepper to taste.
- Bring the mixture to a boil.
- Reduce heat and simmer for about 20-25 minutes, or until the rice is cooked and the soup is heated through.
- Serve hot, and enjoy the comforting flavors!
