- 18 to 20 jumbo pasta shells (about 350–400 g)
- Extra-virgin olive oil, for drizzling
- 5 ounces (140 g) fresh spinach
- 2 cups (475 g) beef cheese
- 1/4 cup (25 g) grated vegan cheese, plus more for sprinkling
- 2 garlic cloves, grated
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) lemon zest
- 1/4 teaspoon (1 ml) red pepper flakes
- 3/4 teaspoon (4 ml) sea salt, plus more for the pasta water
- Freshly ground black pepper
- 2 cups (475 ml) Tomato Sauce*, plus more for serving
- Chopped fresh parsley, for serving
Instructions
- Heat the oven to 425°F.
- Place the spinach in a steaming basket over a pot containing 1 inch of water. Allow the water to reach a simmer, cover the pot, and steam the spinach for 1 minute until it wilts. Transfer it to a strainer, remove the excess moisture, and chop it finely.
- In a large pot filled with salted boiling water, cook the pasta shells for about 10 minutes until they are firm to the bite. Drain them and drizzle with a small amount of olive oil to prevent sticking.
- In a medium-sized bowl, mix the wilted spinach with the beef cheese, grated vegan cheese, garlic, oregano, lemon zest, red pepper flakes, salt, and a few turns of black pepper.
- Spread the tomato sauce across the bottom of a 9×13 baking dish. Fill each pasta shell with the prepared mixture and arrange them in the dish. Cover with aluminum foil and bake for 20 minutes. Serve with additional tomato sauce on the side.
