- 2 tablespoons apricot preserves (optional, for glaze)
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- Gradually mix in the dry ingredients until just combined.
- Press the dough evenly into a 12-inch pizza pan or a 9×13 baking dish.
- Bake at 350°F (175°C) for 12-15 minutes, until edges are lightly golden. Allow to cool completely.
- For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until fluffy.
- Spread the frosting over the cooled cookie base.
- Arrange fresh fruit on top in a decorative pattern.
- Optional: Heat apricot preserves until thin and brush over fruits for a glossy finish.
- Refrigerate for at least 2 hours before slicing and serving.

- For best results, use room temperature cream cheese and butter for the frosting.

- The cookie base can be made a day ahead and stored at room temperature.
