Ingredients
- Old-fashioned oats (certified gluten-free if needed)
- Almond flour (or 1/3 cup coconut flour for gluten-free version)
- Monk fruit sweetener
- Maple syrup
- Ripe banana
- Eggs (or flax eggs for vegan version: 1 tbsp ground flaxseed + 3 tbsp water per egg)
- Vanilla extract
- Baking powder
- Salt
Instructions
- Preheat oven and prepare baking sheets
- Mix dry ingredients in a bowl
- Combine wet ingredients separately
- Mix wet and dry ingredients together
- Form cookies and place on baking sheets
- Bake until golden brown
- Cool completely before storing
