- 2 Chicken breasts
- 1/2 cup Sundried tomatoes
- 2 cups Fresh spinach
- 1/2 cup Heavy cream
- 2 cloves Garlic, minced
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- 1 tsp Dried oregano
- 1 tsp Dried basil
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 6-7 minutes per side.
- Remove chicken and set aside.
- Add minced garlic to the same skillet and cook until fragrant, about 1 minute.
- Stir in sundried tomatoes and fresh spinach, cooking until spinach is wilted.
- Pour in heavy cream and add dried herbs, stirring to combine.
- Return the chicken to the skillet and simmer until the sauce thickens slightly.
- Serve warm, paired with pasta, rice, or veggies.
