Ingredients
- Greek yogurt (full-fat)
- Fresh oranges (for juice and zest)
- All-purpose flour
- Baking powder
- Butter (room temperature)
- Granulated sugar
- Eggs
- Vanilla extract
- Salt
- For glaze: Powdered sugar and orange juice
Instructions
- Preheat oven and prepare cake pan
- Mix dry ingredients in a bowl
- Cream butter and sugar until light and fluffy
- Add eggs one at a time, then vanilla
- Alternate adding dry ingredients and Greek yogurt
- Add orange zest and juice
- Bake until a toothpick comes out clean
- Cool before glazing
Notes
- Can be made up to 3 days in advance
- Stores well in an airtight container at room temperature
- Can be frozen for longer storage
- For extra orange flavor, add 1 tsp orange extract and 1 tbsp orange marmalade
- Can be made into approximately 18 cupcakes (bake 18-22 minutes)
