Ingredients
- – 1 1/2 cups (360 ml) all-purpose flour
- – 1 tsp (5 ml) baking soda
- – 1/2 tsp (2.5 ml) baking powder
- – 1 1/2 tsp (7.5 ml) ground cinnamon
- – 1 tsp (5 ml) nutmeg
- – 1/2 tsp (2.5 ml) ginger
- – 1 tsp (5 ml) salt
- – 1 1/2 cups (360 ml) canned pumpkin
- – 1 1/2 cups (360 ml) sugar
- – 2 tsp (10 ml) vanilla extract
- – 1/2 cup (120 ml) vegetable oil
- – 1/2 cup (120 ml) fruit juice or apple sauce
- – 2 eggs
Instructions
- Set your oven to 350 degrees to start heating.
- In a mixing bowl, gently blend together the flour, baking soda and powder, spices, and salt. Put this mixture aside for later.
- In a measuring cup, mix the vegetable oil with the vanilla extract.
- In a large bowl with a paddle attachment, mix the canned pumpkin, sugar, and eggs until they come together.
- Lower the mixer speed and slowly pour in the oil and vanilla mixture. Keep mixing for about 1 to 2 minutes until the batter is light and smooth.
- Gently incorporate the dry mixture into the wet ingredients using a spatula, folding until well combined.
- Get a 10 x 5 loaf pan ready by greasing it thoroughly, then line the bottom and sides with parchment paper to help remove the bread easily.
- Cook in the oven for an hour, ensuring the middle has risen and the top has turned golden brown. Make sure it is fully baked before taking it out, as an underdone loaf might collapse while cooling.
