Ingredients

Scale
  • 2 cups (480 ml) mashed sweet potatoes (about 2 large sweet potatoes)
  • 1 cup (240 ml) unsalted butter, softened (226 grams)
  • 1 cup (240 ml) granulated sugar (200 grams)
  • 1/2 cup (120 ml) brown sugar, packed (100 grams)
  • 4 large eggs
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 2 cups (480 ml) all-purpose flour (240 grams)
  • 1 teaspoon (5 ml) baking powder (5 grams)
  • 1/2 teaspoon (3 ml) baking soda (2.5 grams)
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1 teaspoon (5 ml) ground cinnamon (2.5 grams)
  • 1/2 teaspoon (3 ml) ground nutmeg (1 gram)
  • 1/2 cup (120 ml) milk (120 milliliters)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking pan.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the vanilla extract and mashed sweet potatoes until combined.
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  7. Gradually add the dry ingredients to the sweet potato mixture, alternating with the milk, beginning and ending with the dry ingredients.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan on a wire rack before serving.

Notes

  • Ensure the mashed sweet potatoes are thoroughly mixed into the batter for a moist cake.
  • Avoid overmixing the batter after adding dry ingredients to prevent a tough texture.
  • Enhance the cake’s flavor by adding chopped nuts or raisins to the batter before baking, and dust with powdered sugar or glaze for a beautiful presentation.
