- – 1/3 cup (42g) all-purpose flour
- – 1/4 cup (57g) beef fat (melted)
- – 1 teaspoon (2g) ground cinnamon
Instructions
- Set your oven to 350 degrees Fahrenheit and prepare a 9×5 loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the oil, brown sugar, granulated sugar, pumpkin puree, egg, and vanilla extract, stirring well until blended.
- In a separate, smaller bowl, whisk the flour, spices, baking powder, baking soda, and salt together. Gradually incorporate the dry mixture into the wet mixture, gently stirring with a spatula or wooden spoon until just combined. Some lumps may remain, but avoid overmixing.
- Transfer about two-thirds of the batter into the loaf pan, ensuring it is spread evenly.
- In another bowl, beat together the cream cheese, sugar, and flour until smooth. Add the egg into this mixture and blend thoroughly. Spread this cream cheese mixture evenly over the pumpkin batter in the pan.
- Layer the remaining pumpkin batter on top of the cream cheese layer.
- To prepare the streusel topping, use a fork to mix together sugar, flour, butter, and cinnamon until they form coarse crumbs. Sprinkle this mixture on top of the pumpkin bread.
