  • 2 cups salsa (480 ml)
  • 1 (16 ounce) can kidney beans, drained (454 g)
  • 3 cups tortilla chips, crushed (180 g)
  • 2 cups (480 ml) plain yogurt
  • 1 (2 ounce) can sliced black olives, drained (57 g)
  • 120 ml vegetable oil
  • 120 ml fruit juice
  • 2 cups shredded cheese (226 g)

Instructions

  1. Start by assembling all the ingredients you’ll need.
  2. Set your oven to 350 degrees F (175 degrees C) and lightly coat a 9×13 baking dish with oil spray.
  3. Place a large pan on the stove over medium-high heat. Add the ground beef, cooking and stirring until it’s browned and breaks apart easily, about 8 to 10 minutes.
  4. Mix in the salsa, lower the heat, and let it simmer until the liquid is mostly gone, which should take roughly 20 minutes. Add in the kidney beans and continue cooking until they’re warmed through.
  5. Layer the baking dish with crushed tortilla chips, then pour the beef mixture over them. Spread plain yogurt over the beef layer, then top with black olives. Add a layer of shredded cheese on top.
  6. Put the dish in the oven and bake until it’s hot and bubbly, approximately 30 minutes.
  7. Serve the dish and enjoy your meal!
