- 1 lb cooked extra lean ground beef
- 1 (7.5 oz) package Pillsbury biscuits
- 1 package taco seasoning (30g)
- 1 and 1/3 cups salsa
- 2 cups diced peppers (red, orange, yellow)
- 1 cup diced red onion
- 1 cup reduced fat shredded cheese (3 cheese blend)
- Chopped green onion for garnish
- Optional: fat-free sour cream for topping
Instructions
- Cook the ground beef in a pan on medium heat until browned. Add taco seasoning and simmer for 5 minutes.
- Preheat your oven to 350°F.
- Spray a 9×13 casserole dish with cooking spray.
- In a large bowl, mix the cooked ground beef with the salsa.
- Chop the peppers and onion.
- Cut each biscuit into six pieces.
- Layer half of the biscuit pieces in the bottom of the casserole dish, followed by half of the beef-salsa mixture, half of the diced peppers, onions, and half of the shredded cheese.
- Repeat layering until all ingredients are used, finishing with a layer of cheese on top.
- Cover loosely with foil and bake for 35 minutes. Remove foil and bake for an additional 15 minutes until golden and bubbly.
- Let it cool for 5 minutes, then cut into six servings and garnish with green onion and fat-free sour cream, if desired.
