Ingredients

  • 1 lb cooked extra lean ground beef
  • 1 (7.5 oz) package Pillsbury biscuits
  • 1 package taco seasoning (30g)
  • 1 and 1/3 cups salsa
  • 2 cups diced peppers (red, orange, yellow)
  • 1 cup diced red onion
  • 1 cup reduced fat shredded cheese (3 cheese blend)
  • Chopped green onion for garnish
  • Optional: fat-free sour cream for topping

Instructions

  1. Cook the ground beef in a pan on medium heat until browned. Add taco seasoning and simmer for 5 minutes.
  2. Preheat your oven to 350°F.
  3. Spray a 9×13 casserole dish with cooking spray.
  4. In a large bowl, mix the cooked ground beef with the salsa.
  5. Chop the peppers and onion.
  6. Cut each biscuit into six pieces.
  7. Layer half of the biscuit pieces in the bottom of the casserole dish, followed by half of the beef-salsa mixture, half of the diced peppers, onions, and half of the shredded cheese.
  8. Repeat layering until all ingredients are used, finishing with a layer of cheese on top.
  9. Cover loosely with foil and bake for 35 minutes. Remove foil and bake for an additional 15 minutes until golden and bubbly.
  10. Let it cool for 5 minutes, then cut into six servings and garnish with green onion and fat-free sour cream, if desired.
