- 1 lb ground beef or turkey
- 1 can black beans, rinsed
- 1 can kidney beans, rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 diced onion
- 1 diced bell pepper
- 4 cups chicken or beef broth
Instructions
- Brown the ground meat in a large pot or Dutch oven. Drain excess fat.
- Add the diced onion and bell pepper; sauté until softened.
- Stir in the taco seasoning and cook for 1 minute.
- Add the black beans, kidney beans, corn, diced tomatoes, and broth.
- Bring the mixture to a boil, then reduce heat to a simmer.
- Simmer for 20-30 minutes, stirring occasionally.
