Ingredients

  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (15 oz) diced tomatoes, with juices
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 4 cups chicken broth (or vegetable broth for vegetarian)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup masa harina
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup chicken or vegetable broth
  • 2 tablespoons melted butter (or oil for dairy-free)
  • Optional: 1/4 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro, for garnish
  • Diced avocado, for garnish
  • Crumbled queso fresco, for garnish
  • Lime wedges, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and both bell peppers. Sauté for about 4-5 minutes until softened.
  2. Incorporate diced tomatoes with juices, black beans, corn, and chosen broth. Add spices (chili powder, cumin, paprika, oregano, salt, pepper) and stir well. Simmer for 15 minutes.
  3. While the soup simmers, prepare tamale dumplings: whisk masa harina, baking powder, and salt. Gradually add broth and melted butter until a soft dough forms.
  4. Roll dough into small balls and set aside. Drop dumplings into the simmering soup, cover, and cook for another 15-20 minutes until firm.
  5. Ladle soup into bowls with dumplings, garnish with cilantro, avocado, and queso fresco. Serve with lime wedges.

Notes

Experiment with variations by adding seasonal vegetables or different beans. Adjust broth for thickness as desired.
