- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a medium pot, bring the vegetable broth to a boil.
- Add the orzo and cook for about 8-10 minutes until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the onion and garlic, sautéing until translucent.
- Add the sliced mushrooms to the skillet and cook until they are softened and browned.
- Stir in the cooked orzo, seasoning with salt and pepper to taste. Mix well to combine.
- Serve warm, garnished with fresh parsley.
