A delicious combination of tender chicken breasts and artichoke hearts, infused with garlic and zesty lemon, perfect for busy weeknights.
Ingredients

- 2 chicken breasts
- 1 can of artichoke hearts, drained and chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper and add them to the skillet. Sear until golden brown, about 4-5 minutes on each side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and sauté until fragrant. Add the artichoke hearts and lemon juice, mixing well.
- Return the chicken to the skillet, spooning the artichoke mixture over the top.
- Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Check the internal temperature of the chicken, aiming for at least 165°F (74°C). Let the chicken rest after baking for a more tender experience.
