Tender Chicken with Artichoke Hearts

Description

A delicious combination of tender chicken breasts and artichoke hearts, infused with garlic and zesty lemon, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 1 can of artichoke hearts, drained and chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper and add them to the skillet. Sear until golden brown, about 4-5 minutes on each side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add garlic and sauté until fragrant. Add the artichoke hearts and lemon juice, mixing well.
  6. Return the chicken to the skillet, spooning the artichoke mixture over the top.
  7. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
  8. Garnish with fresh parsley before serving.

Notes

Check the internal temperature of the chicken, aiming for at least 165°F (74°C). Let the chicken rest after baking for a more tender experience.
