Description

A vibrant and fresh Tex Mex salad bursting with flavors from crunchy vegetables, creamy avocado, and zesty lime.


Ingredients

  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Tortilla chips for topping

Instructions

  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, black beans, corn, bell peppers, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve topped with tortilla chips for added crunch.

Notes

To keep avocados from browning, add a little lime juice right after cutting. For leftovers, store dressing separately to maintain freshness.
