Description

Ingredients

  • 1 lb chicken breast, sliced
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fresh ginger, minced
  • 2 stalks lemongrass, chopped
  • 1 cup mushrooms, sliced
  • 1 bell pepper, chopped
  • Fresh cilantro and basil for garnish
  • Salt and pepper to taste
  • Lime juice for serving

Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. Stir in the red curry paste and minced ginger until fragrant.
  3. Add the sliced chicken to the pot and cook until no longer pink.
  4. Mix in the coconut milk, lemongrass, mushrooms, and bell pepper.
  5. Let the soup simmer for 10-15 minutes until the vegetables are tender.
  6. Adjust seasoning with salt, pepper, and lime juice as desired.
  7. Serve hot, garnished with fresh herbs and a lime wedge.

Notes

For added flavor, experiment with the amount of red curry paste and add a splash of lime juice before serving.
