- 1 lb chicken breast, sliced
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp fresh ginger, minced
- 2 stalks lemongrass, chopped
- 1 cup mushrooms, sliced
- 1 bell pepper, chopped
- Fresh cilantro and basil for garnish
- Salt and pepper to taste
- Lime juice for serving
Instructions
- In a large pot, heat the chicken broth over medium heat.
- Stir in the red curry paste and minced ginger until fragrant.
- Add the sliced chicken to the pot and cook until no longer pink.
- Mix in the coconut milk, lemongrass, mushrooms, and bell pepper.
- Let the soup simmer for 10-15 minutes until the vegetables are tender.
- Adjust seasoning with salt, pepper, and lime juice as desired.
- Serve hot, garnished with fresh herbs and a lime wedge.
Notes
For added flavor, experiment with the amount of red curry paste and add a splash of lime juice before serving.
