Ingredients

  • 1 pack rice paper wrappers
  • 1 pack dried rice vermicelli
  • 30 medium shrimp (cleaned and deveined)
  • 2 ripe mangoes
  • 1 large carrot
  • 1 large cucumber
  • 1 lettuce
  • 1 bunch green onions
  • 1 bunch mint
  • 1 bunch coriander
  • 1 cup peanut butter
  • 1/2 cup water
  • 5 tbsp honey
  • 4 tbsp fresh lime juice
  • 1 tbsp sesame oil

Instructions

  1. Start by making the peanut sauce. In a mixing bowl, combine the peanut butter, water, honey, lime juice, and sesame oil. Mix until smooth, adjusting the consistency to your liking.
  2. Next, cook the rice vermicelli according to the package instructions. Drain and rinse under cold water to prevent sticking.
  3. Cook the shrimp in a skillet over medium heat, ensuring they turn pink and opaque. This usually takes only a few minutes on each side. Set them aside to cool slightly.
  4. Prep the vegetables by thinly slicing the mangoes, carrots, cucumber, and green onions. Tear the lettuce into pieces and chop the mint and coriander.
  5. To roll the shrimp rolls, wet a rice paper wrapper in warm water for a few seconds until soft. Lay the wrapper on a flat surface and place a small amount of vermicelli, shrimp, vegetables, and herbs in the center. Fold the sides of the wrapper over the filling and roll tightly from the bottom up. Repeat until you’ve rolled all the ingredients, serving the rolls with peanut sauce on the side.
