Ingredients

  • – 3 cups (720 ml) grated fresh zucchini about 3-4 medium zucchini
  • – 1 ½ cups (300 g) granulated sugar
  • – 2 large eggs
  • – 2 teaspoons (10 ml) vanilla extract
  • – 1/4 teaspoon (1.25 ml) kosher salt
  • – 3/4 cup (170 g) vegetable oil
  • – 3 cups (360 g) all-purpose flour properly measured
  • – 2 teaspoons (10 ml) baking soda
  • – 1 teaspoon (5 ml) ground cinnamon
  • – 1 ½ cups (270 g) mini semisweet chocolate chips

Instructions

  1. Warm up your oven to 350°F and lightly coat two 8×4-inch loaf pans with a flour-infused nonstick spray. Put them aside for later use.
  2. Allow the grated zucchini to rest in a colander placed in the sink while you proceed with the recipe. Do not squeeze the moisture out.
  3. In a large mixing bowl, combine the sugar, eggs, vanilla extract, salt, and oil, whisking them together thoroughly.
  4. Incorporate the flour, baking soda, and cinnamon into the mixture, stirring gently until just blended, resulting in a very thick batter.
  5. Gently fold in the grated zucchini until it is evenly distributed throughout the batter.
  6. Add the mini chocolate chips, stirring them in until they are just mixed through.
  7. Evenly distribute the batter into the loaf pans that you prepared earlier.
  8. Place in the oven and bake for 40 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the loaves cool in their pans for about 10 minutes.
  10. Carefully run a slim knife along the pan edges, then tip the zucchini bread onto wire racks to cool completely.

Notes

  • Allow the grated zucchini to drain in a colander to remove excess moisture and prevent a soggy bread texture.
  • Avoid overmixing the batter once flour is added to prevent a tough and dense loaf.
  • Substitute some all-purpose flour with whole wheat flour for added fiber and nutrients in a healthier version of the bread.
