  • – 1 teaspoon (5 ml) baking soda
  • – 1/2 teaspoon (3 ml) cinnamon
  • – 1/4 teaspoon (1 ml) salt
  • – 1/4 teaspoon (1 ml) baking powder
  • – ¼ cup (50 g) sugar
  • – 1 tablespoon (15 ml) cinnamon

Instructions

  1. Set your oven to a temperature of 350°F. Prepare an 8-inch loaf pan by lining it with nonstick foil and applying a coat of cooking spray. In a sizable mixing bowl, combine the grated zucchini, sugar, vegetable oil, vanilla extract, and eggs, stirring thoroughly.
