Instructions
- Place the zucchini in a strainer while you prepare the remaining ingredients.
- Set your oven to 375°F and line an 8 x 8 inch glass baking dish with unbleached parchment paper. Put aside.
- In a large mixing bowl, combine the egg, melted vegetable oil, fruit juice sweetener, and vanilla extract; whisk together.
- Add the cocoa powder, baking soda, and salt; mix thoroughly with a whisk.
- Gently squeeze the zucchini to remove excess moisture without completely drying it out, then add it to the bowl and stir.
- Incorporate the flour into the mixture, folding it gently until just combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula. Bake for 25-28 minutes, ensuring the center is slightly firm but not overly set.
