Instructions

  1. Place the zucchini in a strainer while you prepare the remaining ingredients.
  2. Set your oven to 375°F and line an 8 x 8 inch glass baking dish with unbleached parchment paper. Put aside.
  3. In a large mixing bowl, combine the egg, melted vegetable oil, fruit juice sweetener, and vanilla extract; whisk together.
