Instructions
- Set your oven to 350°F and prepare an 8×4 inch loaf tin by lining it with parchment paper.
- Chop the zucchini into medium-sized pieces. Place the zucchini pieces, cacao powder, rolled oats, olive oil, date sugar, and vanilla extract into a small food processor and blend until the mixture is smooth.
- Stir in the dairy-free chocolate chips.
- Pour the batter into the prepared loaf tin and spread it evenly. For decoration, scatter additional chocolate chips on top if desired.
- Bake for approximately 40-45 minutes or until a toothpick inserted in the center emerges clean. Sprinkle with a pinch of flaky sea salt.
