  • 1/2 teaspoon (3 ml) allspice
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (3 ml) baking powder
  • 1 teaspoon (5 ml) salt
  • 2 cups (480 ml) (about 1 large zucchini, grated)
  • 1/2 cup (100 g) granulated sugar
  • 1 teaspoon (5 ml) cinnamon

Instructions

  1. Warm up your oven to 350 degrees Fahrenheit. Prepare two loaf pans by greasing them and coating them with flour, then set aside.
  2. In a big bowl, mix together the oil, eggs, sugar, and vanilla until they’re thoroughly blended.
  3. In another bowl, stir together the flour, cinnamon, allspice, baking soda, baking powder, and salt until well mixed.
  4. Combine the dry ingredients with the wet mixture and beat until the batter is smooth and thick. Add in the grated zucchini and mix until it’s fully combined.
  5. For the topping, mix the cinnamon and sugar in a small bowl.
  6. Pour half of the batter into the loaf pans, then sprinkle with half of the cinnamon-sugar topping.
  7. Add the remaining batter on top and finish by sprinkling the rest of the cinnamon-sugar mixture.
  8. Bake for 45 to 50 minutes, or until a knife inserted into the center comes out clean. Let the bread cool down before cutting it into slices. Each serving is one slice.
