- 1 cup (240 ml) vegetable oil
- 3 eggs
- 1 3/4 cups (420 ml) granulated sugar
- 1 teaspoon (5 ml) vanilla extract
- 3 cups (360 g) all-purpose flour

- 1/2 teaspoon (3 ml) allspice
- 1 teaspoon (5 ml) baking soda
- 1/2 teaspoon (3 ml) baking powder
- 1 teaspoon (5 ml) salt
- 2 cups (480 ml) (about 1 large zucchini, grated)
- 1/2 cup (100 g) granulated sugar
- 1 teaspoon (5 ml) cinnamon
Instructions
- Warm up your oven to 350 degrees Fahrenheit. Prepare two loaf pans by greasing them and coating them with flour, then set aside.
- In a big bowl, mix together the oil, eggs, sugar, and vanilla until they’re thoroughly blended.
- In another bowl, stir together the flour, cinnamon, allspice, baking soda, baking powder, and salt until well mixed.
- Combine the dry ingredients with the wet mixture and beat until the batter is smooth and thick. Add in the grated zucchini and mix until it’s fully combined.
- For the topping, mix the cinnamon and sugar in a small bowl.
- Pour half of the batter into the loaf pans, then sprinkle with half of the cinnamon-sugar topping.
- Add the remaining batter on top and finish by sprinkling the rest of the cinnamon-sugar mixture.
- Bake for 45 to 50 minutes, or until a knife inserted into the center comes out clean. Let the bread cool down before cutting it into slices. Each serving is one slice.
