Description

Indulge in the ultimate guilt-free treat with our recipe for The Best Zucchini Brownies. Learn how to make rich, fudgy brownies that sneak in a healthy veggie twist!

Ingredients

  • – 1/2 cup (112 g) vegetable oil
  • – 1 1/2 cups (300 g) granulated sugar
  • – 1 tablespoon (15 ml) vanilla extract
  • – 2 cups (256 g) all-purpose flour
  • – 1/2 cup (64 g) unsweetened cocoa powder
  • – 1 1/2 teaspoon (8 ml) baking soda
  • – 1 teaspoon (5 ml) kosher salt
  • – 3 cups (720 ml) finely shredded zucchini (DO NOT DRAIN)
  • – 1 1/4 cups (300 ml) semi-sweet chocolate chunks

Instructions

  1. Set your oven to 350°F and get a 9×13 baking dish ready by either greasing it with butter or spraying it with baking spray. Line it with parchment paper, ensuring the paper extends up the sides for easy lifting later.
  2. In a large mixing bowl, thoroughly blend together the oil, sugar, and vanilla extract.
  3. Incorporate the flour, cocoa powder, baking soda, and salt into the mixture. Stir until everything is well mixed, though the mixture will be quite dry.
  4. Gently mix in the shredded zucchini using your hands. Let the mixture sit for about 5 minutes.
  5. Introduce the chocolate chunks and stir once more. The batter should become more moist. If it remains dry, let it sit for another 5 minutes and stir again.
  6. Evenly spread the brownie batter into the prepared baking dish and place it in the oven to bake for 25-35 minutes. The brownies are ready when a toothpick inserted into the center comes out with a few crumbs, but not with any wet batter.

Notes

  • Thoroughly incorporate the shredded zucchini into the batter for even moisture distribution.
  • Allow the batter to rest briefly after adding the zucchini to enhance absorption and softening.
  • Avoid overmixing the batter once chocolate chunks are added to prevent tough brownies.
