- 1 cup firm tofu, cubed
- 1 cup mixed vegetables (e.g., bell peppers, carrots, peas)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add cubed tofu and cook until golden on all sides.
- Stir in mixed vegetables and cook until tender.
- Add the cooked rice and soy sauce, mixing well to combine.
- Cook for an additional 3-5 minutes, stirring frequently.
- Season with salt and pepper, and top with chopped green onions before serving.
Notes
For crispy tofu, press it to remove excess moisture before cooking. Use day-old rice for the best texture.
