Description

Delicious and versatile tofu lettuce wraps filled with savory tofu, fresh vegetables, and topped with zesty sauces.


Ingredients

  • 1 tablespoon sesame oil
  • 1/4 cup onion, diced (yellow or white)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced (or ginger paste)
  • 14-ounce block extra firm tofu, water pressed out
  • 1/4 cup tamari (or soy sauce, coconut aminos)
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup (or agave)
  • 1/3 cup cashews, chopped (raw or roasted/salted)
  • 1/4 cup scallions, chopped
  • 1/4 cup cilantro, chopped
  • 1/41/2 cup carrots, shredded
  • Sesame seeds (for topping)
  • 1 head butter lettuce, leaves removed, rinsed, and dried

Instructions

  1. Heat the pan to medium-high heat and add the sesame oil.
  2. Once the oil is hot, add the diced onions. Toss gently and let them cook for 2-3 minutes until they begin to brown and become translucent.
  3. Add the minced garlic and ginger to the pan. Toss everything together and let it cook for about 2 minutes.
  4. Crumble the pressed tofu into the pan and stir it into the onion mixture.
  5. Cook the tofu, stirring occasionally for about 4-5 minutes, until it turns golden brown.
  6. In a separate bowl, combine the tamari, sweet red chili sauce, lime juice, and maple syrup.
  7. Pour the sauce over the tofu, adding the chopped cashews, and toss to coat.
  8. Reduce the heat to low and allow it to cook together for another 2 minutes.
  9. Remove from heat and stir in the shredded carrots, chopped scallions, and fresh cilantro.
  10. To assemble, take a lettuce leaf and fill it with a scoop of the tofu mixture. Drizzle with sauce and sprinkle with sesame seeds.

Notes

Press the tofu for at least 15-30 minutes for the best texture. Feel free to customize the filling with your favorite ingredients.
