  • 1 cup of rice vermicelli noodles
  • 1 cup of mixed salad greens

  • 1/2 cup of bell peppers, sliced
  • 1/4 cup of fresh cilantro, chopped
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Start by cooking the rice vermicelli noodles according to the package instructions. Drain and set aside.
  2. In a bowl, mix together the soy sauce, sesame oil, lime juice, salt, and pepper to create the dressing.
  3. In a large salad bowl, combine mixed salad greens, shredded carrots, cucumber, bell peppers, and chopped cilantro.
  4. Add the cubed tofu and cooled rice vermicelli noodles into the salad bowl.
