Ingredients

- 1 block of firm tofu, cubed
- 1 cup of rice vermicelli noodles
- 1 cup of mixed salad greens
- 1/2 cup of shredded carrots
- 1/2 cup of cucumber, sliced
- 1/2 cup of bell peppers, sliced
- 1/4 cup of fresh cilantro, chopped
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Start by cooking the rice vermicelli noodles according to the package instructions. Drain and set aside.
- In a bowl, mix together the soy sauce, sesame oil, lime juice, salt, and pepper to create the dressing.
- In a large salad bowl, combine mixed salad greens, shredded carrots, cucumber, bell peppers, and chopped cilantro.
- Add the cubed tofu and cooled rice vermicelli noodles into the salad bowl.
- Drizzle the dressing over the salad and toss gently to combine.
