Ingredients

- 1 block of firm tofu
- 2 tablespoons soy sauce
- 1 tablespoon peanut oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon cornstarch
- 1/2 cup vegetable broth
- Chili flakes (optional)
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess water, then cut it into cubes.
- In a bowl, mix soy sauce and cornstarch, add tofu, and marinate for 15 minutes.
- Heat peanut oil in a pan over medium-high heat.
- Add tofu cubes and fry until golden brown; then remove and set aside.
- In the same pan, add garlic and ginger; stir-fry for 30 seconds.
- Add sliced bell pepper, broccoli, carrot, and snap peas; stir-fry for about 5 minutes.
- Return the tofu to the pan, pour in vegetable broth, and let it cook for another 2-3 minutes.
- Add chili flakes, salt, and pepper to taste.
- Serve hot with rice or noodles.
