Description

A vibrant and nutritious Tofu Veggie Stir Fry packed with fresh vegetables and flavorful tofu, perfect for quick weeknight dinners.


Ingredients

  • 1 block of firm tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon peanut oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon cornstarch
  • 1/2 cup vegetable broth
  • Chili flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a bowl, mix soy sauce and cornstarch, add tofu, and marinate for 15 minutes.
  3. Heat peanut oil in a pan over medium-high heat.
  4. Add tofu cubes and fry until golden brown; then remove and set aside.
  5. In the same pan, add garlic and ginger; stir-fry for 30 seconds.
  6. Add sliced bell pepper, broccoli, carrot, and snap peas; stir-fry for about 5 minutes.
  7. Return the tofu to the pan, pour in vegetable broth, and let it cook for another 2-3 minutes.
  8. Add chili flakes, salt, and pepper to taste.
  9. Serve hot with rice or noodles.
