A refreshing no-bake Berry Delight Icebox Dessert featuring layers of graham crackers, creamy filling, and three types of fresh berries that’s perfect for summer gatherings.

- 2 packages (8 oz each) cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract
- 3 sleeves graham crackers
- 2 cups fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 2 tablespoons lemon juice
- 3 tablespoons granulated sugar
Instructions
- In a large mixing bowl, beat cream cheese and powdered sugar until smooth.
- In a separate bowl, whip the heavy cream and vanilla until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- In a 9×13 inch pan, arrange a layer of graham crackers to cover the bottom.
- Spread 1/3 of the cream mixture over the graham crackers.
- In a bowl, toss berries with lemon juice and granulated sugar. Sprinkle 1/3 of the berry mixture over the cream layer.
- Repeat the layers twice more, ending with berries on top.
- Cover and refrigerate for at least 6 hours or overnight to allow the graham crackers to soften.
Notes
- For best results, make this dessert at least 6 hours before serving to allow the graham crackers to soften properly.
- You can substitute any fresh berries based on what’s in season.
- Store leftovers covered in the refrigerator for up to 3 days.
