Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 teaspoons turmeric powder
  • 6 cups chicken broth
  • 1 pound chicken breasts
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the chopped onion, diced carrots, and celery until softened.
  3. Add minced garlic and turmeric, stirring for an additional minute.
  4. Pour in chicken broth and bring to a rolling boil.
  5. Add chicken breasts and reduce heat to a simmer for about 20 minutes.
  6. Remove the chicken, shred it, and return to the pot.
  7. Add fresh spinach and cook for a few minutes until tender.
  8. Season with salt and pepper to taste before serving.

Notes

For a thicker soup, blend a portion of it and return it to the pot. Pair with crusty bread or a side salad.
