- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 teaspoons turmeric powder
- 6 cups chicken broth
- 1 pound chicken breasts
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion, diced carrots, and celery until softened.
- Add minced garlic and turmeric, stirring for an additional minute.
- Pour in chicken broth and bring to a rolling boil.
- Add chicken breasts and reduce heat to a simmer for about 20 minutes.
- Remove the chicken, shred it, and return to the pot.
- Add fresh spinach and cook for a few minutes until tender.
- Season with salt and pepper to taste before serving.
Notes
For a thicker soup, blend a portion of it and return it to the pot. Pair with crusty bread or a side salad.
