Ingredients

  • 2 pounds of potatoes, diced
  • 2 tablespoons of olive oil
  • 2 teaspoons of turmeric powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Optional: Fresh herbs for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced potatoes with olive oil, turmeric powder, garlic powder, salt, and black pepper until well coated.
  3. Spread the potatoes out in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are crispy and golden brown, flipping halfway through cooking.
  5. Remove from the oven and garnish with fresh herbs if desired.
