Description

A comforting Tuscan beef casserole that combines ground beef, fresh vegetables, and aromatic spices for a delicious family meal.


Ingredients

  • 1.5 lbs lean ground beef
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cups tomato sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup beef broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup shredded mozzarella or Parmesan cheese
  • ½ cup breadcrumbs (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.
  2. Add minced garlic, diced carrots, and bell peppers; cook for an additional 5-7 minutes.
  3. Push the sautéed vegetables to the side and add ground beef to the skillet. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Add tomato sauce, diced tomatoes, beef broth, Italian seasoning, salt, and pepper to the skillet. Stir and let simmer for 10 minutes.
  5. Preheat the oven to 375°F (190°C) and pour the beef mixture into a casserole dish. Top with shredded cheese and breadcrumbs (if using).
  6. Bake for 25-30 minutes until the cheese is bubbly and golden brown. Let cool for 5-10 minutes before serving.

Notes

Serve with crusty bread and a side salad for a complete meal. Casserole can be stored in the refrigerator for up to three days and reheats well.
