Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup chopped kale or spinach
  • Salt and pepper to taste
  • Optional: croutons for garnish

Instructions

  1. Heat one tablespoon of olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about five minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in four cups of chicken or vegetable broth and bring to a gentle boil.
  5. Reduce heat and stir in two cups of heavy cream.
  6. Add one cup of grated Parmesan cheese and stir until melted.
  7. Slowly add in one cup of chopped kale or spinach and let it simmer until wilted.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with croutons if desired.
