Ingredients

- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 cup chopped kale or spinach

Instructions
- Heat one tablespoon of olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about five minutes.
- Stir in the minced garlic and cook for an additional minute.
- Pour in four cups of chicken or vegetable broth and bring to a gentle boil.
- Reduce heat and stir in two cups of heavy cream.
- Add one cup of grated Parmesan cheese and stir until melted.
- Slowly add in one cup of chopped kale or spinach and let it simmer until wilted.
- Season with salt and pepper to taste.
- Serve hot, garnished with croutons if desired.
