  • 125ml Lukewarm water
  • 125ml Lukewarm milk
  • 25g White sugar (2 tbsp)
  • 8g Instant yeast (1 tbsp)
  • Pinch of salt
  • 45g Unsalted butter (3 tbsp)
  • Neutral oil for frying
  • 200g White sugar (1 cup)
  • 2 tsp (10 ml) Ground cinnamon

Instructions

  1. Place the all-purpose flour, white sugar, instant yeast, and a pinch of salt into the bowl of a mixer with a dough hook attachment.
  2. Pour in the lukewarm milk and water, stirring until the mixture is uniform.
  3. Incorporate the unsalted butter and blend on medium speed until the dough becomes smooth and stretchy, which may take up to 15 minutes.
  4. Transfer the dough into a generously oiled bowl, covering it with plastic wrap.
  5. Allow it to rest in a warm environment for about an hour, or until it has expanded to twice its original size.
  6. Take the dough out of the bowl and shape it into a large rectangle, roughly 20cm by 30cm.
  7. Cut away the edges and slice the dough into 12 long, narrow pieces.
  8. Twist the ends of each strip in opposite directions to create tension.
  9. Hold the strip by the ends and let it naturally coil, then further twist it by hand to perfect the shape.
  10. Bring the ends of the dough strip together and press to seal, placing it on a baking sheet lined with parchment paper.
  11. Cover the dough with plastic wrap to let it rise again for 30 minutes, or until it nearly doubles in size.
  12. Heat a deep fryer or a pot filled with neutral oil to a temperature between 280F (140C) and 300F (150C).
  13. Gently add three donuts into the hot oil, frying each side for 2 to 3 minutes, until they turn golden brown.
  14. Take them out of the oil and let them drain on a wire rack or paper towels.
  15. Repeat the frying process with the remaining dough pieces.
  16. Mix the white sugar and ground cinnamon in a shallow container.
  17. Roll each drained donut in the cinnamon sugar mixture to coat thoroughly.
