- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup enchilada sauce
- 8 tortillas
- 1/2 cup diced onion
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine shredded chicken, half of the cheese, onions, cumin, garlic powder, salt, and pepper.
- Take a tortilla and spoon a portion of the chicken mixture into the center, rolling it up tightly.
- Place the rolled tortillas seam-side down in a greased baking dish.
- Pour the enchilada sauce over the top of the tortillas and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro if desired and serve hot.
Notes
For extra flavor, consider adding black beans or corn to the chicken mixture. Use store-bought rotisserie chicken to save prep time.
