Quick and easy chicken enchiladas packed with flavor, perfect for busy weeknights or gatherings.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1/2 cup diced onion
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, half of the cheese, onions, cumin, garlic powder, salt, and pepper.
  3. Take a tortilla and spoon a portion of the chicken mixture into the center, rolling it up tightly.
  4. Place the rolled tortillas seam-side down in a greased baking dish.
  5. Pour the enchilada sauce over the top of the tortillas and sprinkle with the remaining cheese.
  6. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  7. Garnish with chopped cilantro if desired and serve hot.

Notes

For extra flavor, consider adding black beans or corn to the chicken mixture. Use store-bought rotisserie chicken to save prep time.
